Puerto Rico’s multi-division champion Hector “Macho” Camacho
Mexico’s two-division champion Lupe Pintor
Panama’s two-division champion Hilario Zapata in the Modern category
Petey Sarron in the Old-Timer Category

Non-Fighters:
judge Harold Lederman
commissioner Marc Ratner
journalist Jerry Izenberg
broadcaster Col. Bob Sheridan.
trainer Whitey Esneault

Cardwise, as to the boxers' career-contemporary issues:

Camacho is in numerous sets including the 1990 Brown's (RC?), 1991 Ringlords and 1996 Ringside issues.
Pintor has not turned up in my searches yet.
Zapata has a 1982 Panini issue.
Sarron is readily found in a number of sets from the 1930s including an Exhibit card.
