Because the huge majority of the dealers live east of the Mississippi.
And they would rather drive a few hours w/ their inventory then drive 2 days.
If a western destination would be offered, I suspect it would be voted down.
I too would like a different show site out west, but I have no vote nor say.
Vegas would be high on my list.
