I'm voting for ...
... I'm going to throw a vote to the 1959 set. Although I agree with the other comments, I usually collect low grade ... but my 1959 set is almost NM becaue it's so cheap and easy to do. The only real RC is Bob Gibson. There is the Mantle regular and Mantle AS. And outside that ... nothing very challenging.
1958 has three mantles, the Maris rc, Ted Williams, etc. 1956 has Mantle, Ted, etc. that get pricier ... and the commons go for more. So while all three are doable on a budget and we're really splitting hairs, the 1959 set would get my vote. Cheers, Patrick
