If I had to pick one it would be:

Collective Soul - 'She Said'

You cannot have this conversation without mentioning:

I would also consider

ELO - 'Fire on High', 'Turn to Stone', 'Mr. Blue Sky'
Collective Soul - 'Run'

The words to 'Run' are very apropos to our current chaos:

Also, Moody Blues, "Nights in White Satin" and the entire Days of Future Passed album.
But especially Elton John's early material with those fantastic Paul Buckmaster string arrangements --
"Your Song," "Madman Across the Water," "Levon," "Burn Down the Mission," many more...
