You may not ever know, but I think Doc Crandall is a possibility. Not on that Giants team, but I think just before.

Hmm... Crandall did have a long history with the Giants, but I can't find any association close to 1919.

Probably their trainer. They were all called "Doc" and did a lot more than wrap ankles.
