Thanks everyone. Definitely would consider any of the oddball 50s sets. I was also thinking about caramel sets. I think E95 looks like it is a very doable one with plenty of HOFs. Could someone confirm?

E95s are great and the set is attainable. To make it a bit more demanding than buying each one you can find, which wouldn''t take too long to complete it, you could narrow it to picking just the right cards for you.
