The all color backs are most likely from the plate not being wetted which makes it not reject ink in areas that aren't intended to print.

There are other possible reasons, but that's by far the most likely. Tempered of course by it being Topps.

The black can vary quite a bit on some of the 91 Topps but I think this Kittle on the left might actually be missing black ink.

I looked and that seems to be very common on that card. The 91 Topps set has a lot of cool stuff going on.

Yes gray instead of inset borders that are supposed to be black is common on a lot the 91 Topps including the Kittle I have several Kittle cards with both light and dark gray borders but none of them have gray around the Orioles logo and red outside bottom borders like this one.
